"Ski" mode is accomplished by hitting a small ramp with one side of the car. You can see the ramp in the video even though you never see the car hit the ramp. Not saying its easy, but thats how its done. Lets face you have two options if you screw up. One you end up on all 4 wheels with minor damage to the car, two you roll over.
